Carlos’ Food & Wine shares with you Mom’s summer lemon-lime iced crema featuring Batey Premium sugar

Once in a while, I get to partner up with a new brand of food item that I've been following and loving for quite awhile.


Several years ago I discovered Batey sugars and found them to be of excellent quality and competitive in market pricing. Many of the dessert recupera that you've already seen on Carlos-Food-Wine.com have featured Batey sugar.


Today, I'm featuring Batey's Premium Pure Cane sugar on a classic recipe, my mom's own Lemon-Lime iced crema (or cream). It's the perfect dessert for a hot summer day (or night).


*Keep in mind that this dessert requires freezing a few times.


Let's get cooking...


Ingredients:

  • 1 (12 FL ounces) can of evaporated milk

  • 1 cup of white pure cane sugar

  • 1/2 cup of fresh lime juice

  • 2 tablespoons of fresh lemon juice

Directions:

Day 1

  • Pour evaporated milk in a large glass mixing bowl, cover with plastic wrap and place on freezer overnight.


Day 2

  • The next day, take the frozen evaporated milk out of the freezer and begin to beat it with an electric mixer (careful the milk will be hard). Slowly add lime and lemon juice to loosen up the milk. Mix well.

  • Slowly add sugar to mix until creamy.

  • Once mixture is creamy, transfer mixture to a decorative serving bowl or into individual serving bowls, sealing them with plastic wrap and then put them in the freezer until serving time.


Serve it up!

Once ready to serve, uncover bowl or bowls and garnish with thin slices of lemons and limes.
