Rigatoni Pomodoro and 2022 Bollini Pinot Grigio - Vigneti Delle Dolomiti IGT

The perfect weeknight pasta dish is here. Simple ingredients with expressive flavors is what makes this recipe memorable…oh and it can be prepared in less than 30 minutes.


This recipe can be paired with a light red wine but I opted for a crisp Pinot Grigio which truly enhanced the sweetness of the tomatoes and basil and nicely balanced the sharpness of the pecorino and Parmesan cheeses.


This Bollini varietal is exactly what this dish needed. Just lovely.

Rigatoni Pomodoro (pasta cooked with Roma tomatoes, garlic, basil and red chili pepper Pecorino-Romano and Parmigiano-Reggiano cheeses).

Ingredients


Directions

  • Cook pasta according to package instructions.

  • While pasta cooks, on a large skillet or frying pan, add 2 tablespoons of extra virgin olive oil, garlic and about a small handful of basil, begin cooking on low heat for about 5-7 minutes, allowing time for oil to infuse itself with the basil and garlic.

  • Add chili peppers and cook on medium high for 3 minutes. Add tomatoes and reduce heat to medium. Let it all cook for 7 minutes and then reduce heat to low.

  • Once pasta is done, scoop approximately one cup of pasta water before draining pasta. Slowly add some pasta water to tomato sauce and add a handful of pecorino and Parmesan cheese to sauce, stirring constantly ensuring cheese blends well with sauce. Sauce should thicken by now. If necessary, slowly add more pasta water to thicken sauce. Remove sauce from heat.

  • On a large bowl, toss drained pasta with sauce and mix well. Add a little more extra pecorino and Parmesan cheese and add fresh torn basil leaves. Serve immediately.


Serve it up!

On each individual large bowl, spoon a generous protion of pasta and dust off a little more extra cheese on top with some more fresh hand-torn basil leaves. I personally like to drizzle a little extra virgin olive oil and some freshly cracked pepper on top.

Bollini Pinot Grigio is styled to show intense varietal aromas with a fragrant bouquet and elegant, fruity, floral flavors.


The difference between daytime and nighttime temperatures helps create wines that are remarkably fresh and robust in aroma and flavor. Production begins with an immediate pressing of the fruit followed by cold settling.


Vinification is carried out at low temperatures in stainless steel tanks to preserve the fresh varietal character of the fruit.


Tasting notes:

Straw yellow in color, clear-cut and delicate on the nose, with scents of acacia flowers, minerals and pear. The fresh natural acidity supports the wine.
