CLB (Chili, Lemon, Basil) Linguine with 2022 Identitas Falanghina del Sannio DOP Solopaca Winery

The perfect wine for a perfect midweek dinner. I love crafting quick meals that don’t compromise on flavor, and this new recipe—made with just a handful of simple ingredients—paired with this distinctive wine, truly delivers.


Trust me, one bite (and sip) and you’ll be reaching for seconds.


Let’s get cooking!


Menu: CLB Linguine. Linguine pasta tossed with with red chili pepper, lemon zest and fresh basil.


Wine: 2022 Identitas Falanghina del Sannio DOP Solopaca Winery


Ingredients:

• ½ package linguine

• 1 red chili pepper (seeded) finely chopped

• Zest of 1 lemon

• 2 garlic cloves, thinly sliced

• ¾ cup fresh basil leaves, hand-torn

• 1 tsp freshly cracked black pepper

• 1 cup Parmesan cheese, grated

• Salt (for pasta water)


Instructions:

1. Boil Pasta:

Cook linguine in salted water according to package directions. Before draining, reserve 1 cup of pasta water.


2. Infuse Oil:

In a large pan, toast cracked pepper on low heat for 5 minutes.


Add EVOO and chili pepper. Stir gently.

Add garlic and cook until just fragrant (do not let it brown).

Remove from heat.

3. Mix & Toss:

Place drained pasta in a large bowl.

Add contents of the frying pan and toss to coat.

Add lemon zest and mix again.

4. Add Cheese & Water:

Add a handful of Parmesan + a splash of pasta water. Stir well.

Repeat with more cheese and water until creamy and well-coated. Add most of the torn basil and toss.


Server it up.

Plate into bowls and garnish with extra basil, Parmesan, and a light drizzle of EVOO.

Identitas is obtained from a selection of the best Falanghina grapes in different municipalities, to best communicate a product that encompasses all the different expressions and nuances of the vine.

Tasting notes:

The scent is characterized by notes of orange, white melon, mandarin, pineapple, apricot jelly, plum and mimosa. The taste is clear with a hint of citrus that leaves room for ripe yellow fruit. Mineral finish, with a pleasant note of smokiness.

100% Falanghina


Food pairing:

This versatile wine pairs beautifully with seafood, light pastas, vegetable risotto and Mediterranean dishes.
