White wine-butter cream pan sauce chicken and green beans & 2018 Domaine de la Riviere Chardonnay

Carlos' Food & Wine brings you a French-inspired dish that is so easy to make but one worthy of a truly sensational Chardonnay.


Domaine de la Riviere, once again, delivers an exquisite Chardonnay for the ages...their 2018 Next Door Neighbor vintage is outstanding with powerful yet delightful flavors of honey and essences of pears, this wine will pair perfectly with this dish.

Menu: White wine-butter cream pan sauce chicken and green beans.

2018 Domaine de la Riviere

Next Door Neighbor - Chardonnay

(Russian River Valley, Sonoma County, California)


Serves 2


Ingredients:

  • 1 (12 ounce) pack of green beans

  • 1 Shallot, finely minced

  • 3 garlic cloves, finely minced

  • 1/4 cup thinkly sliced leeks

  • 2 tablespoons of fresh sage leaves, finely chopped

  • 3 Chicken cutlets (approximately 1/2 pound each)

  • Sea Salt and cracked pepper

  • 1/2 teaspoon of red chili flakes

  • 1 teaspoon of herbes de Provence

  • 4 tablespoons of Extra Virgin oil

  • 2 tablespoons of butter

  • 1/4 cup of white wine

  • 1/3 cup of heavy cream


Directions:

Green beans:

  • Heat up 1 tablespoon of extra Virgin olive oil in a large frying pan on medium heat.

  • Add shallots and garlic and cook for about 2-3 minutes. Stirring constantly.

  • Add green beans and leeks. Stir and cook on medium heat for about 5 minutes.

  • Add some sea salt and cracked pepper to taste. Stir, cover pan with lid and remove from heat.


Chicken:

  • Preheat to oven to 400 degrees F.

  • Season chicken breasts on both sides with sea salt, cracked pepper and and herbes de Provence. Lightly coat within extra Virgin olive oil.

  • Heat in 2 tablespoons of extra Virgin olive oil in a large frying pan on medium heat.

  • Carefully place chicken in pan and sear for 3-4 minutes on each side. Remove chicken from pan and place them on an oven proof dish and cook in oven for about 10 minutes.

  • In the same pan where the chickens had been cooked, add butter and heat up pan again to medium heat.

  • Add chopped sage and cook for one minute. Next, add red chili flakes and cook for another1-2 minutes.

  • Add white wine and reduce for 2-3 minutes, stirring occasionally.

  • Add cream and stir well, simmering on low heat for 3-5 minutes. Turn off heat.

  • Place cooked chicken breasts back on pan with sauce and spoon over sauce on top of chicken.


Serve it up!

On an individual plate, place one piece of chicken breast on the center of the plate.


Spoon a generous portion of the green beans next to the chicken. Finally, top of the chicken with plenty of pan sauce.

About the wine…

The 2019 growing season in the Middle Reach Neighborhood started out wet and cool but finished with warmer conditions in the back half of the season.


2019 saw less prevalent morning fog compared to previous years, which led to slightly warmer days and greater length of sun exposure.


A frost event during March slowed budbreak and rain events in early May, during flowering, impacted cluster formation, resulting in shatter that reduced harvest yields by 15 to 20 percent.


While yields were down, the shatter resulted in highly concentrated fruit and excellent quality. Growing conditions from June through harvest were ideal, allowing our vines to catch-up from the slow start and develop to their full potential.


Harvest started on August 22nd for Rosé and finished on September 26th with a Chardonnay pick.


The wines hand crafted in 2019 show impressive quality, highlighted by fine acidity, abundantly concentrated fruit, vibrant color and well-balanced elegance.

Tasting notes:

A deliciously rich chardonnay, exhibitimg aromas of bartlett pear and white flowers giving way to flavors of yellow apple, baked pie crust, lemon peel with a hint of vanilla.


Barrel aging has softened the youthful acidity adding layers of silky minerality.


Grapes:

100% Chardonnay


Alcohol

14.1%


Food pairing: Excellent with spicy Asian cuisine, grilled chicken and seafood dishes, salads, light appetizers and mild cheeses.
