Shrimp Fra Diavolo pasta & 2022 Pinot Grigio Vigneti delle Dolomiti IGT

Fra Diavolo in Italian means "amongst devil." It is a typical Italian-American spicy tomato-based sauce for seafood or pasta. The base for this delicious spicy sauce is tomato, garlic, crushed red pepper flakes and fresh parsley.


For this recipe, I am adding a little more diavolo, I mean more spicy elements like cracked pepper and Calabrian chili paste and some fresh shrimp.


Nothing too cool off the heat of this dish then a nicely chilled Italian Pinot Grigio wine.

Menu: Shrimp Fra Diavolo pasta (spicy shrimp pasta)


Wine pairing: 2022 Pinot Grigio Vigneti delle Dolomiti IGT (Trentino-Alto Adige Italy)


Serves 4


Ingredients

  • 2 lbs of fresh shrimp, peeled, deveined and tail removed

  • 1 lemon, juice and zest

  • 1 teaspoon of red chili pepper flakes

  • 1/2 teaspoon cracked pepper

  • 2 garlic cloves, minced

  • 1 medium shallot, minced

  • 1/4 cup of freshly chopped Italian parsley

  • 1/2 teaspoon Calabria pepper paste

  • 3 tablespoons Extra Virgin olive oil

  • 1/4 cup white wine

  • 1 cup tomato sauce

  • 1/2 package of spaghetti


Directions

  • In a large skillet, heat up olive oil on medium heat. Add shrimp and cook for 3 minutes on each side. Remove from pan and set aside. Add garlic and shallots and cook for 2 minutes.

  • Add cracked pepper, pepper flakes, lemon juice and zest, stir well. Add Calabrian chili paste and stir well.

  • Add white wine and reduce sauce, cooking for 5 minutes. Add shrimp back to pan. Add parsley and add tomato sauce, stir well. Reduce heat to low, simmer for 5 minutes and turn off.

  • While sauce is simmering, cook pasta per package instructions. Drain and then carefully toss pasta with sauce on the skillet (or in a large bowl).


Serve it up!

Serve individually in deep bowls. Optional garnish: freshly chopped Italian parsley.

2022 Pinot Grigio Vigneti delle Dolomiti IGT (Trentino-Alto Adige Italy)


Bollini Pinot Grigio is styled to show intense varietal aromas with a fragrant bouquet and elegant, fruity, floral flavors. The difference between daytime and nighttime temperatures helps create wines that are remarkably fresh and robust in aroma and flavor.


Production begins with an immediate pressing of the fruit followed by cold settling. Vinification is carried out at low temperatures in stainless steel tanks to preserve the fresh varietal character of the fruit.

Tasting notes: Straw yellow in color, clear-cut and delicate on the nose, with scents of acacia flowers, minerals and pear. The fresh natural acidity supports the wine.

Food pairing: Excellent as an aperitif, it is perfect with fish, white meat and light meals in general.
