Pan-seared skirt steak with rosemary-shallot-rum butter sauce and yuca fries & 2018 Mullan Road Cellars Columbia Valley Cabernet Sauvignon

The best challenge a cook can have is creating with what is a available. I recently found myself with very little ingredients at home and decided to elevate a rather traditional Latin American steak and yuca fries dish by adding a savory compound butter that when it melts on top of the steak, it becomes quite a textured sauce.


Of course, no meal is complete without a good bottle of wine. Mullan Road Cellars accentuates this dish with ample fruit and spice that brings out the steak and the rum in the butter sauce.

Serves 2


Ingredients

Steak:

Butter sauce:

  • 4-5 sprigs of fresh Rosemary, finely chopped

  • 1 small shallot, finely sliced (julienne style)

  • 1 garlic clove, finely chopped

  • 1 stick of salted butter (8 tablespoons) softened

  • 2 tablespoons of extra virgin olive oil

  • 3 tablespoons of aged dark rum *recommend:


Yuca fries:


Directions

Butter:

  • In a small skillet, heat up olive oil on medium-low heat and sauté shallots and garlic for about 2-3 minutes. Remove from heat.

  • In a medium bowl mix softened butter with shallot/garlic mixture and chopped rosemary.

  • Transfer butter into a stretched out plastic wrap. Form the butter into a log, twisting the ends to seal.

  • Place log inside refrigerator until steaks are cooked and ready to serve.


Yuca fries:

  • Cook yuca fries according to packet instructions, I highly recommend using an air fryer for fast and even cooking.


Steak:

  • Season steak with sea salt and cracked pepper. Lightly coat steak on both sides with 2 tablespoons of extra virgin olive oil.

  • In a large cast iron pan, heat 2 tablespoons of extra virgin olive oil on medium-high heat. Carefully place steak on the pan and sear each side for 3 minutes.

  • Reduce heat to medium-low and continue to cook to desired doneness.

  • Remove steak from pan and let rest for abiut 5-10 minutes. Slice steak into two pieces for serving.


Serve it up!

On each plate, place a nice amount of yuca fries around the center of the dish. Place skirt steak on top of half of the serving of yuca fries. Top steak with a few slices of the butter, letting it melt on top of steak.


Optional garnish: a few twists of freshly cracked pepper and/or a fresh sprig of Rosemary.

While the 2018 vintage saw some extreme heat in some of lower elevation appellations, on the Royal Slope it was just warmer than normal with short stretches in the late summer providing 100+ degree temps.


The fall cooled slightly allowing for us to pick almost into the second week of November, giving us tremendous tannin, fruit and color development.


The resulting wines have incredibly dark color, gorgeous textures and refined mid palate depth with good phenolic balance that offers structure and complexity.


Tasting notes:

Aromas of vibrant red and black currants, blackberry, plum skin with a hint of black tea.


Swirling brings up plum puree, cocoa powder and vanilla bean. The palate is juicy, offering fresh black fruits, black tea, a hint of crème de cassis and hardwood spice.


The tannins are supportive and finely accentuate the vibrant loamy minerality on the finish.


Grapes:

82% Cabernet Sauvignon

11% Cabernet Franc

7% Merlot


Food pairing:

Grilled fine red meat, beef fillet, risotto, medium-high aged cheeses
