Grilled lemon-sage chicken & Dill-olive oil potato salad and 2020 Daou Discovery Sauvignon Blanc

Living in Miami has its many advantages, the weather is one of them and to me, there’s nothing more relaxing than enjoying a simple meal (usually grilled) by the pool, even in “winter“ months.


I was craving cool and fresh ingredients and came up with a fantastic olive oil based potato salad with dill that I had been growing in my backyard. This fantastic side dish beautifully complemented an Italian-inspired chicken dish.

This is the perfect post-holiday meal that is packed with flavor, easy to make, light to eat and best of all, healthy.

Let‘s get cooking!

Menu: Grilled lemon-sage chicken and dill-olive oil potato salad.


Wine pairing: 2020 Daou Vineyards - Discovery Sauvignon Blanc (Paso Robles, California)


Serves 2-3


Ingredients

Chicken:

  • 2 pounds of fresh chicken breast

  • 3 tablespoons of fresh sage, finely chopped

  • 1 teaspoon of ground sage

  • 1 teaspoon of salt

  • 1 teaspoon of cracked pepper

  • 1 garlic clove, finely minced

  • 1/4 cup of extra Virgin olive oil

  • Zest and juice of 1 lemon

  • 1 lemon, cut in 1/2 inch thick slices


Potato salad:

  • 3 pounds small yellow potatoes (Yukon gold or yellow baby Dutch), scrubbed, peeled, cooked and chopped into small bite-sized chunks

  • 2 small shallots, finely minced

  • 1/2 cup extra Virgin olive oil

  • 3/4 cup lightly packed fresh dill, large stems removed (+ more for garnish)

  • 2 teaspoons Dijon mustard

  • 1 teaspoon maple syrup

  • Juice of 1/2 a lemon

  • 2 large cloves garlic, finely chopped

  • 1 teaspoon salt

  • 1/4 teaspoon ground black pepper (or more to taste)

Asparagus (optional side dish/garnish):

  • 1 pack of asparagus spears

  • Sea salt & pepper

  • Extra Virgin olive oil for drizzling


Directions

Chicken:

  • Place chicken breasts on a shallow dish and season both sides of chicken breast with salt, pepper and ground sage.

  • In a small bowl, mix fresh sage, garlic, lemon zest, lemon juice and olive oil.

  • Pour olive oil mixture on both sides of chicken breast and let marinade for about 5 minutes.

  • Grill chicken until cooked through.

  • Grill fresh lemon slices for approximately two minutes on each side. Remove from grill and use as garnish when serving chicken.


Potato salad:

  • Peel potatoes and boil until a knife can go through. Carefully drain and let potatoes cool. Then cut into bite sizes pieces.

  • Place all dressing ingredients in a blender and process for about 20 seconds until well combined. Set aside.

  • Once the potatoes have cooked and cooled, add the dressing and toss gently. Taste and adjust seasonings as needed. Cover and chill in your refrigerator until serving. Store leftovers in an airtight container in refrigerator for 2-3 days.

Asparagus:

  • Place asparagus flat on a long dish. Season with salt and pepper, the drizzle some olive oil on top of asparagus.

  • Grill asparagus for approximately 3-5 minutes on each side or until slightly charred. Once cooked, place asparagus to serving dish.


Serve it up!

This deliciously rustic meal is mean to be served on platters, family style.

I highly recommend cutting Chicken breast in thick slices and garlic aging the platter with the grilled asparagus and lemon slices.

Tasting notes:

An enticing nose of gooseberry and lemongrass anticipates tempting notes of pineapple, kiwi and grapefruit.

Suggestions of lime zest, quince and acacia flower round the aroma profile.


The palate is clean, lively and elegant, exuding mouthwatering flavors of juicy pineapple, green apple, kiwi and melon.


Lingering notes of key lime, white peach, dragon fruit and citrus persist through a long and lovely finish.


Grapes: 100% Sauvignon Blanc


Alcohol: 13.7%
