Gnocchi with butternut squash-rosemary sauce & 2020 7 Cellars - The Farm Collection Chardonnay

Carlos' Food & Wine is excited to share a new recipe and wine pairing posting featuring a brand new partner, 7 Cellars.


7Cellars was founded by professional football icon John Elway, and his long-time business partner, Jeff Sperbeck.

With the success of Elway’s Steakhouses, John wanted to create a wine that would parallel his ideals and be a noble expression of his family’s name.


John and Jeff partnered with iconic winemaker Rob Mondavi, Jr. to release the company’s first vintage of Reserve wines. After five successful and sold out vintages of the Reserve, 7Cellars has expanded with another collection.


The Farm Collection (which will be featured on Carlos' Food & Wine) was released in March of 2020. This accessible collection offers superior quality for which the brand is known, at a friendly price.


Let‘s get cooking!


Menu: Gnocchi with butternut squash-rosemary sauce with Pecorino Romano cheese.


Wine pairing: 2020 7 Cellars - The Farm Collection Chardonnay

(Arroyo Seco, California)


Serves 2-3


Ingredients

  • 1 (16 ounce) package of gnocchi

  • 1 (15 ounce) package of frozen butternut squash, cubed

  • 1 garlic clove, finely minced

  • 1 small shallot, finely chopped

  • 1 tablespoon of lemon zest

  • 3 tablespoons of extra Virgin olive oil

  • 2 tablespoons of fresh rosemary, finely chopped

  • 1/3 cup of grated Pecorino-Romano cheese

  • 1/4 cup of white wine

  • Sea Salt & cracked pepper

  • 1/4 cup of reserved pasta water (to be used if necessary)


Directions

Sauce:

  • Boil frozen butternut squash according to package instructions. Then drain, and transfer to blender and blend until smooth. Set aside.

  • On a large pan, heat up olive oil on medium heat and add garlic. Stir and cook for 2 minutes.

  • Add shallots. Stir and cook for 2-3 minutes. Add lemon zest and rosemary and cook for 2 minutes.

  • Add wine and cook until wine is reduced by half.

  • Add butternut squash purée, mixing well. Add salt and pepper to taste. Reduce heat to low and stir, cooking for 5 minutes.


Pasta:

  • Cook gnocchi per package instructions. When almost done cooking save about 1 cup of pasta water. This might might be needed as a thickening agent if sauce consistency is to liquid like (see last bullet point).

  • Once gnocchi is cooked drain and transfer to the pan where the sauce is.

  • Gently mix the pasta, making sure the sauce covers all of the pasta. Add pecorino cheese and stir.

  • If pasta seems too liquid like then add small amounts of pasta water (just add small amounts of pasta water to cooked sauce until desired consistency is reached).


Serve it up!

I personally like to serve gnocchi individually and in bowl. Just spoon a generous portion on each bowl and add some extra pecorino cheese and cracked pepper on top.

Tasting notes:

This medium-bodied Chardonnay is a bright, fruit-forward wine with tropical fruit, lime, and pear; complete with balanced acidity.


A well-structured wine with flavors of green apple, and a touch of toasted oak on the finish.


Grapes:

100% Chardonnay


Food pairing: Mild, buttery or creamy dishes. Grilled vegetables, grilled chicken, grilled shrimp, salad with goat cheese, or Thai style chicken wings.
