To me, there’s is one type of wine that is incredibly accessible and versatile…and that is rosé.
I have often featured this refreshing varietal in my of my postings but I would like to introduce to you a fantastic rosé from Daou Vineyards in Paso Robles, California.

When researching this wine, I discovered that Georges and Daniel Daou (proprietors and winemakers of Daou) came of age in the south of France, where dry rosés were expressive and galvanized a sense of joy and abandon.
Their DAOU Rosé is faithful in spirit and style to these wines of their youth.

Making rosé the proper way had become an obsession for Daniel, who strictly follows the true Méthode Provençale when making DAOU Rosé.
“We choose high-end Grenache vineyards that are planted to limestone soils, just like those of southern France, because they impart this wonderful acidity, minerality and sense of balance,” Daniel says. The fruit is grown exclusively for their rosé production.

“We put a lot of effort into barrel fermentation, lees stirring and final blending,” Daniel adds. “This is the best—and most expensive—way to make a rosé. This is the DAOU way.”
The result is truly a wine that transports the senses to Provence while illustrating
the pure fruit character of Paso Robles.

Menu: Pan-Seared sage chicken with lemon-white wine pan sauce and rosemary mushrooms & rainbow carrots
Wine pairing: 2020 Daou Vineyards Discovery Rosé (Paso Robles, California)
Serves 2
Ingredients
Chicken:
2 (1/2 pound each) chicken breasts
2 tablespoons of fresh sage, finely chopped
6-8 fresh sage leaves
3 tablespoons of extra Virgin olive oil
2 tablespoons of unsalted butter
1/4 cup of white wine
Juice of 1/2 a lemon
Mushrooms & carrots:
1 cup of baby portobello mushrooms, sliced
1/4 cup of sliced rainbow carrots
2 tablespoons of fresh rosemary, finely chopped
2 tablespoons of extra Virgin olive oil
Sea salt & cracked pepper
Directions
Chicken:
Season chicken with salt, pepper and chopped sage on both sides.
On a large skillet or frying pan, heat up olive oil on medium heat. Sear chicken breasts 2-3 minutes on each side.
Add sage leafs and carefully fry until slightly crispy and then remove from pan, setting them aside for garnish.
Add to the pan butter, white wine and lemon juice. Gently mixing while cooking the chicken for another 5-10 minutes (or until cooked through).
Mushrooms & carrots:
On a large frying pan, heat up olive oil on medium heat. Add mushrooms and cook for 5 minutes.
Add fresh rosemary and cook for 3 minutes. Season with salt and pepper t taste. Mix and then add carrots.
Cook for an additional 2-3 minutes and then remove from heat.
Serve it up!
This quick meal is incredibly easy to plate up.
Start by placing chicken breast on the center of the dish (I actually sliced the breast and then placed it on the dish).
Next, spoon a generous portion of the mushroom and carrot mix next to the chicken.
Place a few fried sage leafs on opposite side of the chicken and then drizzle some of the pan juices/sauce from the sage chicken pan on top of the chicken and serve.

Tasting notes:
This wine is remarkably fragrant, offering generous aromas of fresh peach, Bartlett pear and nectarine, with subtle notes of hyacinth, apricot and crushed rose petals.
The palate is delightfully silky, underlying a clean, fresh crispness delivering enticing flavors of mango, Crenshaw melon, lemon chiffon and tangerine.
Secondary layers reveal hints of sweet cherry and vanilla with orange peel accents.
A luxurious and lasting finish leaves traces of apple pie, strawberry and kiwi.
